This is another wonderful dessert from QVC host David Venable’s COMFORT FOOD SHORTCUTS cookbook. I have to warn you while this will look like cookie bars when it is baked you will want to take a smaller slice than you think, it is very very rich.
Pre heat the oven to 325, move the oven rack to the lower third of the oven. Line a sheet pan with foil and place in the oven while it is pre heating.
In the bowl of your stand mixer add 2 large eggs 1/2 cup granulated sugar, 1/2 cup packed light brown sugar, 1 teaspoon pure vanilla extract, 1/4 teaspoon table salt and whisk for 4-5 minutes, until the mixture thickens, turns a pale yellow and doubles in volume. You can do this step with a hand mixer you will just have to stand there for the 4-5 minutes until the size doubles.
Next add to the bowl 3/4 cup unsalted butter (1 1/2 sticks softened and cut into 1 inch pieces) and beat on medium high until combined. There will be small pieces of butter the size of panko bread crumbs in the batter. Lower the speed to medium add 3/4 cup all purpose flour and mix until all incorporated. Using a rubber spatula stir in 1 cup semisweet chocolate chips. Finally spread evenly in a 9 inch deep dish pie crust.
Place the pie crust on the prepared cookie sheet and bake for 60-65 minutes, until a knife inserted halfway between the edge and the center comes out clean. Remove from the oven and place on a wired rack to cool for 25=30 minutes. cut into wedges and serve.
You can top this with whip cream, a scoop of vanilla ice cream or even a drizzle of chocolate syrup.
We have tried other combination of flavored chip as well, I highly recommend white chocolate, a mix of half white half semi sweet, or half semi sweet and half peanut butter. Really you could try and combination of chips that is your favorite.

- 1 cup semi sweet chocolate chips
- 1 9 inch deep dish pie crust
