It is no surprise that we love fried potatoes in our house. We are trying to cut down on the deep-frying, hence the use of our air fryer. So I wanted to come up with a way we could have fries that would be equally good in the air fryer or the oven. I was at the grocery store looking for wedge fries but was unable to find any so I decided to make my own.
Take your russet potatoes scrub them and cut them into wedges lengthwise.
Now if you have ever made your own fries you know that before frying the potatoes you should soak the cut fries in could water over night to pull the excess starch out to allow maximum crispness. Well for these oven or air fryer I leaned a trick from one of my culinary hero’s Meredith Laurence (AKA the Blue Jean Chef) and her new cookbook One Pot Comfort. If you boil the potatoes for 3 minutes in water before going in the oven or air fryer the result is fluffier inside. Make sure you pat the potatoes dry with a clean kitchen towel before going into the oven.
There are actually three ways you can make these you can do them right on a sheet pan in the oven, in the air fryer or you can mimmick the air fryer in a regular oven by using a crisper tray or a cooling rack over a sheet tray to allow air to circulate around the potatoes.
If cooking in the oven preheat the oven to 450º (400º for the air fryer) drizzle with canola or olive oil. I recommend the EVO spray bottle. Season with salt and pepper and place in the preheated oven for 25-30 minutes (18-20 minutes in the air fryer).
Then all that’s left is to plate it up and enjoy.
- 3-4 russet potatoes
- Salt and pepper to taste
- Canola or olive oil
- pre heat ovento 450º (400º for air fryer)
- scrub and cut potatoes lengthwise
- parboil the wedges for 3 minutes
- pat dry with a clean kitchen towel
- drizzle with oil and season with salt and pepper
- place on a sheet tray, raised crisper try (or in the air fryer)
- bake for 25-30 minutes in the oven (18-20 in the air fryer)
