These are an all time favorite at our house. Sometimes called Pork Steaks or as I knew them Pork Blade Steaks, these come from the shoulder of the pig actually from the same part as the Boston Butt, used for Pulled Pork. In fact the Blade Steak is cut from the Boston Butt. They are a cheaper cut of pork and can be quite tough because of the amount of collagen in them. Now even though they are refered to as steaks they do need to cook longer than typical beef steaks.
I start these the way I start all meats by taking them out of the fridge and let them come up to room temp. After letting them sit on the counter for 20-30 minutes I set my oven to preheat at 375, and prep the blade steaks.
Line a baking sheet with tinfoil, trust me on this step for your clean up. Pat the steaks dry with a paper towel and season both sides with salt and pepper and cover the top side with Coffee flavored BBQ sauce, my favorite for this is Jake’s Grillin’ Coffee BBQ Sauce, but go with your favorite or give Jake’s a try. Once the oven comes up to temp at 375 place the baking sheet in the oven on the middle rack and let it cook for 15 minutes.
After 15 minutes flip the Blade Steaks and cover second side in the bbq sauce and return to oven for another 15 minutes. After cooking for about 30 minutes total remove from the oven and tent loosely with foil and let rest for about 5 minutes. After resting plate with a starch and a veggie. These are so moist and tender and delicious you will thank me for this recipe and will make these often.
Now I am sure you noticed in the title I call these Pork Blade Steaks with Coffee BBQ Sauce and not BBQ Pork Blade Steaks. This is a bit of a pet peeve of mine, as I live in Central Pennsylvania people around here refer to anything covered in BBQ sauce as being barbecue. Now my family is from the south (North Carolina and Georgia) and my father lived in Texas for many years so I am a bit of a purist when in comes to calling something barbecue. If you are cooking on a grill with direct heat for a short period of time you are grilling. If you are cooking with indirect heat low and slow with added smoke flavor that is BBQ. Barbecue is a technique not a sauce.
Don’t get me wrong I love grilled foods covered in sauce, but to me it should not be referred to as BBQ, and don’t even get me started on the people that call sloppy joes BBQ.
Pork Blade Steaks
Salt and Pepper to taste
Coffee Flavored Sauce
- Steaks from fridge to come up to room temp.
- preheat oven to 375
- line baking sheet with foil.
- pat steaks dry with paper towel
- season both sides with salt and pepper
- cover topside with sauce
- place baking sheet in oven on middle rack
- cook for fifteen minutes
- flip and cover other side with sauce
- return to oven for another 15 minutes
- remove from oven loosely tent with foil and rest for 5 minutes
- plate with a starch and a veggie
