As I said before I have been pulled into the air fryer craze. If you don’t have an air fryer you should seriously think about getting one. It takes all of 2 minutes to preheat, can do everything your toaster oven and oil fryer can do plus more.
Now this recipe is one I have been doing for many years. I first did the recipe years ago when I was watching a show that used to be on during the daytime on the Discovery Channel. The show was Epicurious hosted by Michael Lomonaco and Barbara Alvarez. The episode was about foods at a hotel in Hawaii, the chef at one of the resorts was showing his recipe for Macadamia Crusted Mahi Mahi. I am not a big seafood fan, in fact I think the only fish I eat is tilapia and maybe catfish, and macadamia nuts are usually on the very expensive side so I wracked my brain trying to come up with something I could do along the same lines. I finally settled on using chicken thighs, the most tasty part of the chicken, and the buttery taste of cashew.
Take about 3 cups of cashews and crush them either in a food processor or put them in a bag and crush them with a rolling pin, okay lets be honest it doesnt matter how you crush them as long as you get to a nice texture about the same as panko. Place cashew crumbs into a shallow bowl. In another shallow bowl whisk 2eggs together for an typical egg wash.
Take roughly 1 Lb of boneless skinless thighs and cut them into equal strips like small tenders. I like to season the chicken at this point with salt and pepper.
Using the dry hand wet hand method run the chicken through the eggs with one hand and then cover the chicken in the cashew dish with the other. Set aside on a clean plate.
Once you have coated all the chicken in the cashews pre heat your air fryer to 360 for 2 minutes. Spray all sides of the chicken with vegetable oil and place into the aire fryer in 2 batches. Fry for 10 minutes flipping half way through. Pull first batch and repeat with the second batch.
Plate and serve with your favorite sauce like hot sauce or honey mustard.
