Yeah that’s right smoked brownies! I was making the Smoked Chuck Roast and had a thought, something sweet is always a great pairing with BBQ. So I whipped up a batch of brownies and threw them on the smoker with the roast. I was using cherry wood so it had a sweet mild fruity flavor that i thought would go well with the chocolate caramel brownies. I am no baker by any stretch of the imagination so I used a boxed brownie mixture. You could make this using your own brownie recipe. The key to this is where you place the brownie pan, and I highly recommend using a disposable one, in the smoker. I use an offset smoker with a fire box like the Char-Griller Smokin-Pro. So I placed the brownie pan on the opposite side from the fire box because if not the one side of the outer edge would have been overly done dry and too hard to eat.
Because I made these at the same time I was cooking my chuck roast my smoker was at 250 instead of the 350 the boxed brownies called for so I let them go for about 25-30 minutes longer than the package called for I checked with a tooth pick every time I opened the smoker to baste the chuck roast and when it came out clean I knew it was done. These were the perfect end to a BBQ dinner the only thing that would have been better was if we had some vanilla ice cream and Kalua Hot Fudge to top the brownie with.
You may be skeptical of this but give it a try and you will be plesantly surprised
