Today when I woke up I had a craving for pulled pork sandwiches for dinner. Unfortunately I didn’t have any pork shoulder in the house with which to make it. I couldn’t go get any because Karen had the car and beside it wouldn’t have had the time to sit with the rub, I like to do mine the night before smoking it. What we did have was a couple of pork tenderloin so I took them out of the fridge and figured I would just roast them the way I normally do, but I really wanted pulled pork.
I thought and thought how I could get pulled pork I knew we couldn’t go to the local BBQ place because they would be closed before Karen got off work today. I figured I could try and make pulled pork out of what I had on hand. I knew I couldn’t prepare it the same way as if I had a Boston Butt. While even though the tenderloin is in fact very tender it doesn’t usually have a lot fat. Then it hit me. The Slow Cooker.
I started off preparing the rub. For this I went somewhat light on the rub. I used 1 teaspoon each of Smoked Paprika, Smoked Sea Salt, White Pepper, Dried Sage,Garlic Powder and Light Brown Sugar. Mixing the dry ingredients together I removed the tenderloin and patted dry.
I liberally coat each piece with rub flip and coat other side. Place the pork in slow cooker with 1/4 cup water and 1/4 cup cola. Cook on low for 4-6 hours. Remove from slow cooker and shred with forks.
Serve on a soft sesame seed bun and top with your favorite sauce and have at it. The only thing missing it some nice fatty sections you would get from the shoulder and the bark you get from smoking (I am a huge Bark Shark).
Not a true pulled pork sandwich to a purist but it will do in a pinch. Give it a try and let me know what you think.
2 lb pork tenderloin
1 teaspoon smoked paprika
1 teaspoon smoked sea salt
1 teaspoon white pepper
1 teaspoon dried sage
1 teaspoon garlic powder
1 teaspoon light brown sugar
1/4 cup water
1/4 cup cola
1 remove pork from fridge and let set for about 30 minutes
2 mix dry ingredients for rub
3 Pat dry pork with paper towel and coat liberally with dry rub on all sides
4 add pork, water and cola to slow cooker
5 cook on low for 4-6 hours.
6 remove cooked pork and shred with forks
7 serve on soft sesame seed bun and top with favorite sauce
